Eastern European cuisines feature some of the same approach to salads found in Western Europe, especially in summer, when variations on lettuce salads with oil and vinegar dressings can be found throughout the region. Throughout the year, local vegetables such as radishes, beetroot, cucumbers, rhubarb, carrot, diced pickled gherkins and mushrooms, as well as dill, mustard seeds and red pepper, will be found in salads more frequently than they would be in Italy or France, as will cooked and then cooled vegetables rather than delicate lettuces. In colder months, hardier vegetables or cooked vegetables might be used for salads.
